Peaches are a perfect accompaniment to any recipe, with their succulent juicy flavour it brings a fresh taste to sauces.
For us we currently use peaches in two ways, fermented and roasted. These sauces are still in testing but when we are happy we will introduce them to you.
Roasting brings an amazing flavour that just intensifies the fruity flavour with a sprinkle of sugar to encourage caramelisation it also brings an amazing colour to the sauce.
Fermentation is the complete opposite , lacto fermentation give the peaches a tangy flavour that’s so moorish.
