Black Garlic Aioli, The perfect Sauce?

Aioli is a sauce deeply rooted in northwest Mediterranean cuisine, the name translates as Garlic and oil. With this in mind Black garlic is a perfect ingredient to go into this sauce to give an incredible umami flavour bomb. With this simple recipe you can make your own.
- 2 egg yolks (1 or 2 depending on how thick you want it)
- 40 g black garlic
- 1 tsp squid ink (You don't have to add this)
- 1 tsp lemon juice
- 1 pinch salt
- 118ml olive oil
Instructions
- Put all ingredients in
- Slowly add in olive oil and continue to blend until aioli thickens
- Store in fridge in airtight container and consume within 3 days
You can adjust the thickness buy varying the amount egg yolks used, 2 yolks will give you a thicker sauce for a steak but if you are going to use this with chips then 1 yolk will make it a bit thinner.
