Black Garlic Aioli, The perfect Sauce?

Aioli is a sauce deeply rooted in northwest Mediterranean cuisine, the name translates as Garlic and oil. With this in mind Black garlic is a perfect ingredient to go into this sauce to give an incredible umami flavour bomb. With this simple recipe you can make your own.

  • 2 egg yolks (1 or 2 depending on how thick you want it)
  • 40 g black garlic
  • 1 tsp squid ink (You don't have to add this)
  • 1 tsp lemon juice
  • 1 pinch salt
  • 118ml olive oil

Instructions

  1. Put all ingredients in 
  2. Slowly add in olive oil and continue to blend until aioli thickens
  3. Store in fridge in airtight container and consume within 3 days

You can adjust the thickness buy varying the amount egg yolks used, 2 yolks will give you a thicker sauce for a steak but if you are going to use this with chips then 1 yolk will make it a bit thinner.
