Confit Garlic

Confit garlic is a traditional French preparation where garlic cloves are slowly cooked in oil to produce a soft, spreadable texture with a rich, buttery flavor. The method involves cooking the garlic in oil at a low temperature for an extended period of time, which helps to preserve it and create a flavor that is both mild and sweet. Confit garlic can be stored in an airtight container in the refrigerator and used in a variety of dishes, including sauces, dips, spreads, and more.

 

Ingredients:

  • 10 garlic cloves
  • 1 cup olive oil
  • Salt, to taste
  • Thyme, rosemary or bay leaves (optional)

Instructions:

  1. Preheat oven to 300°F (150°C).
  2. Peel the garlic cloves and place in a single layer in a small, oven-safe dish.
  3. Pour the olive oil over the garlic, making sure it covers the cloves completely.
  4. Add salt and herbs, if using.
  5. Cover with aluminum foil and bake in the oven for 45-60 minutes or until the garlic is tender and golden.
  6. Remove from oven and let cool to room temperature. Store in an airtight container in the refrigerator for up to 2 months.
  7. Use as desired in recipes or as a spread for bread.
