Black Garlic White Pizza With Ricotta And Mozzarella

Pizza is an age old meal, perfect snack or finger food but if you are looking for a new topping that isn't margarita or Hawaiian 🍍 then a white pizza is a great new style to try, a white sauce combined with black garlic to produce an incredible flavoursome pizza.
  • 1 ball of pizza dough 
  • extra-virgin olive oil for brushing the dough
  • salt and freshly ground black pepper
  • 1 shallot thinly sliced
  • 1-½ tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh tarragon
  • 5 cloves black garlic thinly sliced (Very important you finely slice or the taste will be too strong)
  • 125g ricotta
  • 75g shredded fresh mozzarella
  • 60g Double cream

Instructions

  • Place your pizza stone or tray (if using) on an oven rack in the middle of your oven. Preheat the oven to 260 Degrees Celsius and let it heat up for at least 30 minutes while you make the dough and get the toppings ready

To stretch or roll out the dough

  • Place the dough on a clean work surface and, using your hands, gently stretch it into a 12-inch circle, ensuring an even thickness all over. 
  • Dust with flour or lightly oil and place the stretch dough onto your pizza stone or tray 
  • Brush the dough all over with olive oil, making sure to cover all the pizza. Sprinkle with salt and pepper, then the shallot, and then half of the chopped parsley and half of the chopped tarragon. Scatter the finely chopped black garlic evenly on top, be careful not to go over the top with this stage as black garlic has a strong and easily overpowering flavour. Sprinkle dollops of ricotta all over the pizza and scatter on the mozzarella
  • Follow with drizzling the cream over all.

To bake the pizza

  • Leave the pizza in the oven for 10 minutes, checking on the pizzas colour, once golden brown 

To finish

  • Immediately after you take the pizza out of the oven, top with the remaining chopped parsley and tarragon and season with a little more salt and pepper to your preferred taste.
